Some tips to beat the summer heat without AC - and some comments on the future of water

A few days ago we had a series of very hot days, where the record for the hottest day was set and then broken the very next day.  Here in the United States we have various parts of the country that are under Heat Domes and other weather conditions have resulted in temperatures in the triple digits. One of the reasons that my wife and I moved to the country was to avoid increasing heat and humidity that we were experiencing in Florida.  However in moving to the country we bought a home that did not have central air or heat.  We were lucky enough to adapt to both extremes in a variety of ways and have adopted many of the concepts discussed here.  I have covered the topic of staying warm without central heat before in this blog and decided that I should talk about staying cool without central air this time around.  As the temperature rises in the future it's going to affect how we work, play, eat and even the decisions that we make .  It's also going to affect the most disenfran

So what comes next?   Most of our house improvement projects are done, but the last blog post I wrote got me thinking about something because winter is closing in on us, although this time two years ago we already had a several inches of snow on the ground.  Today, as I write this we are expecting a balmy 46 F (8 C) although it's rainy and windy so it feels a bit colder.   Sadly winter is on it's way, so my first order of business on a lazy Saturday is creating a bit of a shelter for all the outdoor cats which have adopted us. We have two indoor cats and two indoor/outdoor cats which are our own.  Our neighbor is a good guy but he owns four horses and a goat.  Because of this he keeps a few barn cats around, which serve to keep the rodent population in check and away from his animals feed Our back porch is generally where they hang out  because they are protected on one side by a wall, which serves as a windbreak and they also know that Sue and I are totally powerless agai

Easter, Family and Hrudka (Slovak Egg Cheese)

    We are having my family over for Easter.       Generally speaking I'm happy about this.   I don't get to see my brother and his family very often.  I'm sure that my niece will have a bit of fun feeding our next door neighbor, Billy the horse. as well as enjoying a good dinner of glazed Ham, carrots with some pesto and my homemade ricotta, scalloped potato's and maybe some grilled asparagus.       Easter is also a time of rebirth, a call back to simpler times when the natural cycles of the world held sway.   Both Susan and I are non religious, believing in Science more than some Higher Power but we are both smart enough to know that traditions matter; and that deep down we are still hardwired to be thankful for warmer days ahead. A taste of the secret Amish Kitchens

     I don't know what attracts me to "Amish Cheese's."  I came across a few recipes while putting about on the interwebs and was taken by them.  They do seem rather simple to make and they require little in actual work but they do require time.  While not exactly a "set it and forget it" cheese, these cheeses often used milk that has spoiled naturally over time or "Clabbered."       Which, considering the Amish lifestyle, makes perfect sense.  The Amish are not a wasteful people.        One cheese that caught my eye is called Amish Cup Cheese.   It is a soft spread where you heated the milk to room temperature first (about 72 F) then let it cool, letting the curds seperate from the whey.    Then you add a bit ingredients and again...you "rested" the cheese for 12 hours before moving on to the next step.  Then, again add some more ingredients then rest for 5 hours before moving on.  It's not hard, just time consuming.        It's

      I'm slowly but surely moving ahead with my cheese hobby. Recently I found some Facebook groups and other resources that are helpful in how to make cheese and what equipment I need,  including how to build a cheese press and make a cheese "cave."   Although I swear they are all hiring professional photographers to take pictures of their cheese!     I'm still trying to keep it simple, however after the success of the Insta Pot Paneer cheese , I could not help but wonder what other cheeses I could make in an Insta Pot.   I found three different types of cheeses actually.   Cottage Cheese, which frankly I never really liked the taste of and wasn't interested in making.  Mozzarella and Ricotta were the other two.  I picked the recipes that I did simply because they didn't require any rennet or starters like many of the other recipes I found.     I was unsure if I was ready for Mozzarella yet.       Out of all the cheese's this is probably the one that

       Hey everyone!  Did you know that this page now has a companion Facebook page?    It will have articles, memes and such that interest me that relate to this page but don't really apply.  Be sure to check it o ut!        I have to be honest, at no time did I ever think I would want to make cheese.   My first effort , done more as an experiment than anything else, turned out very well.  So well in fact, that I wondered what else I could make.   I wanted to keep it simple. A 1001 simple things - Projects for the New Year

           Happy New Year!  I don't make New Year Resolutions expect for the one I actually keep, which is not to make any Resolutions in the coming year.  Because of that, this post is a bit about our plan for the year ahead.  It's more of a general outline then anything else.       As we move into this new year both Sue and I are looking forward to it.   These past few months I've joined a lot of Facebook groups and other things to learn about homesteading, gardening and 1001 simple little things.   Some things I've found to be helpful, others not so much.       I bring this up for the simple reason that "becoming a homesteader " is going to mean different things to different people. We don't really fit into any one category ourselves.      We are planning on having a garden suited to the two of us come the spring and already have the materials needed to start planting the seeds.  We are planning on canning our excess veggies; and our freezers are fil

      I decided that I could not let this holiday and year pass without comment.  I've started and stopped writing this entry three or four or five times now.  I've always done some sort of "year in review" for every blog I've ever wrote and this is no exception.        However I've only kept this blog since late September and really haven't done much in the way of "homesteading."      The question for me become how do I summarize a year that has been anything but simple?  How do you close out a year that has...to put it mildly...been anything but normal?   A year that frankly, I can't remember some parts of because they seem to exist in a dreamlike state?      It started simply enough, Sue and I were living in Florida and talking about moving home to PA, discussing about starting a bed and breakfast , etc.   Nothing that was to wild or out of the ordinary.        Our home in Florida had been off and on the market for the previous two years w

I spent more time in the kitchen this weekend.

    As I wait for one or two more estimates about putting together a transfer switch, so I can use the generator to power parts of the house in case of a blackout,    I thought that I should as least do something in the kitchen this weekend.     Part of my journey into "country mousehood" is learning how to cook.  If your growing your own food, you should at least know how to prepare it is some form right?     Having a deep love and respect for history and a desire to explore, I've learned that flavors and styles change.  Big business determines what we eat (and that is several blog entries waiting to happen) and as such the American palate grows smaller and our desire for something that isn't familiar to us, grows less.     Hence you don't see venison (deer), duck, rabbit or turtle soup anymore in the restaurants and inns of America.  When I lived in Florida, I looked forward to eating other types of fish only to see the big three - Salmon, Tilapia and Haddock (w
